This is a low carbohydrate salad that you can whip up in the morning and take to work.

Serves 2

Prep: 5 minutes

Cook: 10 minutes

Ingredients

100g broccoli

1 medium carrot

400g tin or jar of cooked butterbeans

1 tin of tuna in olive oil (check that it’s from a sustainable source)

1/4 red onion, finely sliced

parsley to serve

olive oil

1/2 tsp red wine vinegar

salt & pepper

Method

heat a frying pan and pour in a few millimetres of water and bring to a simmer

add the broccoli to the pan, cover and leave to steam for 3-4 minutes. add more water if you need to – don’t let the pan boil dry

put the broccoli to one side and drizzle a little olive oil in the pan

add the butter beans and brown for about 3-4 minutes on each side. don’t move them too much while cooking

meanwhile, using a speed peeler grate the carrot into ribbons – the same way you would peel the outside skin.

add the carrot, onion, broccoli, beans and tuna in a bowl and mix

drizzle over the vinegar and olive oil, season with salt and pepper and finish with parsley
