This is usually something I would make for breakfast but there is no reason why you can’t have it for lunch or dinner!

Serves 2-4

Prep: 5 minutes

Cook: 15 minutes

Ingredients

1 tin of organic black beans

1/2 red onion, finely diced

1/3 pepper, diced

1 garlic clove, minced

1 avocado

2 – 4 eggs

dried or fresh chilli (optional)

olive oil

salt & pepper

Method

heat some olive oil in a deep frying pan

add the onion and pepper and saute for 3-4 minutes

add the garlic and stir through

discard 1/3 of the liquid from the tin of beans and add the rest to the pan

add salt and pepper to taste and simmer for 5 minutes

create little spaces in the beans for the eggs

crack in 2 – 4 eggs

cover the pan and simmer for 5-6 minutes or until the eggs are cooked to your taste

take off the heat, divide into bowls and top with avocado, spring onion and chilli
