My clients fill out a health history questionnaire and food diary before we meet. This gives me the background information I need for us to get the most out of our one to one consultation. I usually recommend one initial consultation and at least one follow up consultation with my clients. This is dependent on the issues we are dealing with though, so more than one follow up consultation may be necessary to get optimal results.
