Makes 12 Flapjacks

Ingredients

180g oats

1 tsp vanilla essence

3 tbsp mixed seeds (flax, sunflower, pumpkin, hemp)

80g unsalted melted butter or 80ml cold pressed rapeseed oil

175g dates chopped

2 ripe bananas

Method

Mash the bananas in a large bowl

Add the dates and butter/ oil to the banana and mix together

Stir in the oats, mixed seeds and vanilla essence and leave for 5 minutes, so the oats absorb the oil

Spoon the mixture into a well greased baking tray and at 175C/ Gas mark 5 for about 25 minutes.

Slice into squares and serve
